Implementation of linear programming on Nata de coco from coconut water and skim of coconut milk
The objective of this research is to study the ratio of coconut water and coconut
skim milk using linear programming without the use of computer, the ability to solve a
linear programming problem repeatedly at a nominal cost. The benefit, ofWiWresearch is the
utilization of coconut skim milk; in the coconut oil production by biotechnological method
for Nata de coca is very useful and valuable for the combating protein-calorie malnutrition
problem. If testing of the linear programming model on the Nata de coca can be obtained,
this model can be used for the utilization of fruit wastes to produce Nata de coca.
The method used in this research is batch fermentation of coconut yater and skim of
coconut milk by Acetobacter xyhum. The total volume of substrate is 400 mL and 40 mL
inoculums of A. xyhum. The batch bioreactor containing coconut water & inoculums, and
skim of coconut milk of 19% : 81% ; 28% : 72% ; 37% : 63% ; 46% : 54% ; 55% : 45%;
respectively. The price of coconut water is Rp. 0.50,- per gram, starter is Rp. 3.125,- per
gram, and skim of coconut milk is Rp. 0.35,- per gram, respectively. Linear programming
was done to obtain the maximum value of skim of coconut milk, and the minimum value of
coconut water and starter at an appropriate price.
The research results show that the ratio of coconut water & starter, and skim of
coconut milk, namely; 45% coconut water & 10% starter, and 45% skim of coconut milk
and the minimum price is Rp. 1,570,- per kg product. According to the chemical analysis
that the Arsenic, Cyanide, Copper, Pb, Hg, NOs- were zero mg/L, respectively.
Carbohydrate and cellulose content of 30.11% and 0.06%, respectively. The pH value of
Nata de coca is 6.27. Texture, colour, taste, and aroma are in the normal condition.
Microbiological analysis shows that E. coli content is zero that means this Nata de coca can
be consumed by the consumers.
